Exchange 2010 - retiring an old DC and introducing a new DC

In our environment, we have one Exchange 2010 server (with all roles consolidated) and two DC's. One of the DC's is physical and we would like to virtualize it. From what I understand, best way to accomplish this is to just introduce a new (virtualized) DC, replicate the data to it, and retire the old DC.

What I would like to understand is how Exchange 2010 will "forget" the old DC and "pick up" the new DC. Do I have to manually make Exchange aware of the new DC?

This physical DC holds onto all the FSMO roles and a is a global catalog server. Other than moving the FSMO roles to the new virtualized DC, is there anything else I should be aware of before demotion of the old DC? And, specifically with respect to Exchange 2010?
